Aroma after the pour is lean and paraffin-like; swirling and additional time in the glass stimulate more expressive aromas of black pepper, sea salt and jalapeño pepper. Palate entry is tight, acidic and keenly peppery; by the midpalate stage, the flavor profile’s sinewy character goes totally dry and spicy. Ends up very trim.
